Gyotaku is the time honored, traditional Japanese art of fish printing, captured on a piece of shoji paper as a keepsake. The process is extremely delicate and artistic... just like the food served. When you hear a dish is made of seared foie gras with mango sauce, you probably wouldn’t picture it as sushi. But here at Gyotaku, Hong Kong’s newest creative sushi restaurant, a little knob of vinegared-rice makes for the perfect blank slate for a slew of new flavors.
Gyotaku opened its doors on Stanley Street in January, targeting higher end sushi-lovers with artful creations. Owner John Liang wanted “a team of chefs that can produce great tasting dishes for the Hong Kong taste bud with innovative ideas while adding a slightly modern twist to traditional Japanese food.” Only the freshest ingredients are used - sourced from Canada, Australia, Taiwan, Spain and Brazil – and dishes are painstakingly crafted from scratch, everything from the fruit-based curry sauces to the popular homemade fruit sake.
